Roselle Kefir – A Healthy, Delicious and Probiotic Water Kefir Soda
Here’s some good news for soda lovers! Now you can enjoy a carbonated drink that is both healthy and tasty – roselle kefir.
Most of us are aware of the dangers of drinking soda regularly. A regular 12oz can of soda contains 39g of sugar, the equivalent of about 10 teaspoons of sugar, usually in the form of high fructose corn syrup. Numerous studies have shown the connection between the regular consumption of carbonated drinks and various diseases of the modern age. Diseases such as diabetes, kidney damage, fatty liver, pancreatic cancer, cardiovascular disease and stroke.
Diet sodas are no better. Using artificial sweeteners like aspartame may not contain calories, but they sure aren’t any better. A report published in the journal ‘Trends in Endocrinology & Metabolism’ in 2013 showed that people who drink carbonated drinks suffer from the same health problems as those who opt for regular carbonated food.
Most people like soda because of its ‘carbonated feel’ and taste. Many go for juice even when they are thirsty. They consider it a refreshing drink. In fact, instead of rehydrating us, drinking soda leaves our bodies in a more dehydrated state.
Water kefir soda
An excellent substitute for soda is water kefir. It is less well known compared to its cousin, milk kefir. However, it is an antioxidant drink that is a probiotic. It contains numerous enzymes, vitamins and minerals unlike soda which contains synthetic caramel color (a substance that causes cancer), phosphoric acid (causes mineral loss) and caffeine.
Many different flavors of water kefir can be made using different fruits such as oranges, apples, pineapples, berries and so on. One little-known water kefir soda that’s delicious, refreshing, and nutritious is roselle kefir, which the author discovered by accident.
Consider rosella. It is a flower that belongs to the hibiscus family. Roselle is used in different parts of the world in alternative medicine. In India, Africa and Mexico, all aerial parts of the roselle plant are valued in folk medicine. Infusions made from the calyx or seeds of rosella are prescribed as a diuretic, to stimulate bile production and to treat fever. In Senegal, rosella extract is recommended for lowering blood pressure. In East Africa, an infusion of the calyx, called “Sudan tea,” is taken to relieve coughs.
Rosella contains one of the highest levels of vitamin C. It contains 3 times more vitamin C than black currants and 9 times more than citrus fruits. It has also been found to have rich antioxidant properties (anthocyanins). A fresh rosella cup has been found to contain vitamin D, vitamin B1, vitamin B2 and vitamin B2 complex, vitamin A, niacin and calcium.
Fermenting rosella juice with water kefir grains make a really tasty water kefir drink. Even little juniors love this refreshing drink. I have 2 year olds who ask for more after they try it for the first time. Another 10 year old begged me to teach his mom how to make it!

The preparation of this drink rich in probiotic enzymes is very simple. The basic method is to put grains of water kefir in a glass jar of water with a little sugar, cover the jar, leave for 24 hours, strain and that’s it! The finished drink can then be flavored with the addition of fruit juices and stored in the refrigerator for a delicious carbonated kefir that everyone in the family will enjoy.
As for the rosella kefir, all you have to do is put water kefir grains in a jar of rosella juice, let it sit for 24 hours and strain. Store it in an airtight container in the fridge for another day to make it bigger. It is certainly superior to any soda in both nutrition and taste! Who needs soda anymore?
